Added some wine stabiliser at 1.008 to stop the yeast, giving me about 14.8%. Tastes pretty good but bloody strong!

Sooo... The sulphates halted fermentation for a couple of hours! 1.006 this morning! Going to rack into a new bucket with some campden tabs & crash cool tonight.

Racked this off last night and decided to try some (it finished at 14%). The sweetness is perfect for my taste but it's so strong it's un-drinkable. Gunna have to dilute it down to 7%.

Age some of it. It'll need a good 6-12 months, but you've pretty much made apple wine so bottle some without priming and see how it develops over time!

Planning - Some kits until I can get back to AG, then a hoppy porter, Jim's ESB, some American Red.

I agree with aging it. I always store at least a third of each brew for a year, it's ALWAYS paid off.

Apparently dry hopping is supposed to take away some of the burn for high alchamol TCs.

Would be rude not to try. ;)

I've been doing some maths and an addition of 4.5l of apple juice should bring it back to a sensible 10%.
