I've seen some guys sweeten it with splenda as it dosnt ferment, if thats the question.

Just drank the first of my 1st TC made as Dreadskin suggests only with massive amounts ot tea (1 big mug with 3 teabags soaked for 10 mins in 4.5L) and it's not bitter at all, I'm confused by this.

Hi all.Dont know if this is the right place to post this.but here go's
After reading yesterday i now want to make cider.
Went to aldi & got.
2lt apple juice.
1lt oj.
1lt cherry vimto.
White sugar.
brown soft sugar.
Young's wine yeast.
Youngs yeast nutrient.
Now the hard bit can any one tell me a recipe and if i need any thing else (can't use honey)

I dont know about the OJ, but it's your cider :)
Feck them all in a DJ and ferment.

Started my 5th ever brew a couple of days ago. (so far i've done 1 kit beer, 1 wine, 1 turbo cider and a 5 gallon vat of various fruit juices and sugar - to see what happens)

This is the 2nd turbo cider.

Now for some reason i got confused in Tescos, and forgot that mentally i'd decided 1 jar of honey should be plenty for a one gallon DJ. so naturally I bought 2 (I had clubcard vouchers...) along with 5 litres of own-brand apple juice.

So here's the recipe and method:

1 litre of apple juice + 800g (2 jars) clear honey in a saucepan.
Heat and stir until mixed nicely
Add mixture to demi
Top up with 3 more litres of AJ (didn't need 5th carton :P)
Take a gravity (was 1050 I think)
Add teaspoon of yeast nutrient (young's)
Add teaspoon of yeast (Young's high alcohol wine yeast)
apply airlock
realise it's not cooled at bottom, so panic and bung it in a sink full of cold water
realise that all the honey's at bottom, so give it a good shake
remove airlock, take another gravity - 1090
Apply airlock
???
Profit

Now i have no idea what this is gonna turn out like, seeing as of my 5 brews, the only two i've tasted properly is sneaky sips of the beer and vat-o-juice whilst waiting for 'em to clear - Beer's almost there. Juice, well, dunno yet. The other TC is bottled and awaiting a wedding, but didn't taste too bad during bottling process.

Anyway, approximately 48 hours later and it's got a good fermentation going on... 12.5% cider here i come! Woo!

n.b. gonna use same recipe, with cinnamon to make a proper mead cyser at some point - just as soon as I can afford a third demi (I heard Meads take ages)

Hey just buy a 5 L bottle of water in the supermarket costs me round a euro dump the water (or drink it :shock: ) and you have yourself a DJ

They sell PET ones on ebay for pretty much nothing, but i kinda assumed they're cheep because they're not as good. They do have pressure release/airlock valve thingys on too. (I don't like the idea of not being able to release some pressure and ending up with a cider explosion covering my spare room in half fermented crap)

So, plastic = fine? And can I still make wine in em?

I use them, no problem. Just leave the cap loose on it and the CO2 will get out.
You can buy airlocks and grommets if you want.

20 ltrs TC (I 'acquired' a few large water bottles from dispensers - says 19 ltrs on the label but it easily holds 20)

16 ltrs apple juice (el cheapo sainsbury's)
3 ltrs apple & raspberry juice (slightly more expensive sainsbury's)

Simmer 340g honey in around 1 ltr of apple juice for 5 mins (el cheapo sainsbury's honey)
Add 15 ltrs of juice to the fermenter
Add 1 cup of black tea
Add the juice with honey
Add 2 teaspoons pectolase
S-04 yeast (because that's what I have in the freezer).

Kept a lot of headspace for yeast activity and added the top up apple juice after 5 days (it took that long for the manic fermentation to slow a little).

The trouble with being a teacher is that everyone in the area knows you. In the past few days I've been seen buying 19 ltrs of juice and 19 jars of honey (for the mead). This will come back to bite me at the next parents evening!

Here's a question for anybody with any idea.

Using a high alcohol yeast, what is the highest abv you could expect to acheive? Would we be talking 25%+ or is that asking too much from our yeastie friends?

Cracking idea though.

I think you could easily hit 18 - 20 but would risk creating lighter fuel over that even if you could exceed it.

Still.. frightening people sounds like an outstanding idea. See how many family members you can get to pass out before the presents are opened!

OK, Now to decide whether to do a TC variant or just to try something off the wall.

Anyone tried a 20% abv xmas pudding TC :twisted: :twisted: or would that be just stoooooopid

not sure about the strength, but someone has definately done a tc with xmassy stuff. can't remember the name but i'm pretty sure its the chap with the napoleon dynamite avatar. He did it with mince pie filling i think.
