took a reading today- 1012 after about 4 days at 21 c. OG was 1056. had a little taste and it was quite sweet. i dont want my cider to be too dry so was thinking about bottling tomorrow. is this ok as it would probally drop to say 1000 normally? also when priming i was thinking about siphoning my 4 litres of cider from the dj into another dj with 1 litre of juice in the bottom and then bottling. does this sound ok? thanks in advance

If its still fermenting then its going to continue to do so, and so get drier, whether you bottle it or not - the act of bottling doesn't end fermentation. I would let it drop until its done and then sweeten it to taste.

As far as priming goes you've got to remember that priming with apple juice will alter the sweetness as per above. If its just carbonation you're after use sugar. If not take a sample of the TC and add juice in controlled amounts until you get where you want to be - again bearing in mind that some of the sweetness will ferment out so it will always end up a bit drier than when you test it.

Having said all that I'd just go for it with 1 litre of juice in 4 of TC. It will not be dry and this is all part of the fun of experimenting :)

I siphoned mine into another demi an left it for a couple of days to clear down a bit. Then poured in another ltr of apple juice an bottled. It gets nice an fizzy. I had 10 bottles saturday an had to start more TC tuesday as ive nearly run out :lol:

thanks for the answers. i will siphon into another dj when its finished, leave for a couple of days to clear, then siphon onto another litre of juice to prime and leave to condition(after a little taste). thanks again,
