Hi all
Decided to make some more TC yesterday, 15 ltrs to be exact
Trouble is I was just standing in the kitchen when I heard this hissing sound

(reminded me of an episode of Only Fools And Horses with the blow up dolls that were exploding!) I turned around and my TC had blown the airlock
All the yeast crust is coming up the airlock and Im not sure what I need to do, shall I tip some of the TC out or just leave it ?

i had the same thing with some tc not so long ago. what i did was take out the airlock and squeeze a length of syphon hose in the hole in the bung and run the other end into a bucket of water with the end of the tube under the water. this way the syhon tube was acting like an air lock but was much less messy as all the foam goes into the bucket rather than all over the shot.
forgot to say, once the crazyness is over just top up with more juice if you like.

Turbo Cider - cider made with juice from concentrate like del monte.
ANyhew,just pop the airlock off for a bit and let is all oooze out - theres a big enough co2 layer to protect it - an airlock isnt necessary for that volumke, especially early on. Lord, I made 40 pint fermentation bins of real cider with just the lid resting on top and that doesnt oxidise at all.

True TC is cheap apple juice from concentrate and any yeast at all, the original recipe calls for Allisons bread yeast
It's called turbo due to the speed of fermentation

I generally just use one packet of wine yeast, from young's.

no need to wait. some poeple say the best cider is made in the cold, as it takes longer to ferment out. think of the summer my friend!

Hi Dreadskin, will it still ferment at 10 degees cos my kitchen is really cold, probably as cold as 5 degrees through the night I use heaters fo my beer and wine but I only have 2.

maybe you could try to use a lager yeast as they ferment at very low temps.just a thought.

One tip to prevent the breakthrough, crusty, foamy head; don't add your entire apple-juice at the start. Add 2/3 of the required volume at the start and after three or four days, once activity has slowed, add the rest.
Oh and I now only use Allinson's - doesn't seem to ferment out as dry as cider specific yeast.

IF IN THE COLD IT WONT START stick it beside a radiator for a day or two until the fermentation is going furiously. this has just happened to my newest creation(apple and cherry TC). One is working ok and another identical on has not started. i have put it beside the radiator last night and it was showing more progress this morning. after a day or so its going back in to the cold spare room.

Ive just done apple and cherry, bottled the bugger up last nite. I have to say im a bit dubious about it cos the cherry an apple juice i used just tasted like flat cherry coke. Im hoping the cider doesnt come out like cherry coke. I dont want a side line in alcopops ^^
