Hi all
I was bought a 7 day wine kit as a pressy, I have never made wine before, in the instructions it says that after fermentation is complete I should add the stabiliser and finings leave for 24 hours to clear then syphon into another FV sweeten if liked then bottle. Surely it makes more sence to syphon the wine into another FV with a tap then add the stabiliser and finings, wait for it to clear and then tap into bottles. Will it be OK to do this?

I would follow the kit instructions myself. although don't expect the wine to be fully clear after 24 hours. Kit instructions are somewhat on the optomistic side imo.
The point of adding the finings/stabiliser, then syphoning the wine into another container ensures that the sediment is left behind in the demijohn. If you syphon the wine into another FV with a tap then add the stabiliser and finings, when you come to bottle the wine there is a risk of some of the sediment ending up in your bottled wine.

Hi my wine has cleared and I transfered it into another FV last night and sealed it, my wine bottles are currently outside in a big plastic bin full of water to soak the old labels off only it's a solid block of ice. Don't worry about your wine, it will be ok. In fact, it may be better to leave it for a few days as another small sediment will probably form. You could carefully bottle your wine then if you wish, just be careful not to disturb the sediment. You could transfer it again to another container if you wish, leaving the sediment behind if you feel that you will disturb it & it will end up in your bottled wine.

just a quick question, my Mrs likes dry Cava what would be the best wine kit to use so I can have a go at making some?
