Elderflower TC

Post by crafty john » Wed Feb 11, 2009 12:11 am

Hi all
My Mrs asked me if you could use organic elderflower cordial (no added ingredients) Just natural stuff, to make elderflower TC
If so what ratio of cordial to water would I use? how much and what type of yeast for a demijohn.

It might sound crazy but I might give it a go.

Cheers everybody

Thats probably one of the more sane ones ive read on this forum. Im sure i read somewhere on here someone fermenting tomato juice.

Is it dilute cordial? Id see what the instructions are, usually it says x parts water to x parts pop. I think its 3 water to 1 pop. I spose it depends how mouth puckering it is

Should I fill the DJ two thirds full at first and add the rest when it calms down? also what sort of yeast? I was thinking maybe champagne yeast? would a t spoon be enough or shall I chuck a whole sachet in?

There are some awsome organic juice concentrates in the supermakets these days and pretty cheap too.

For a demi a spoon of yeast should do but using the whole packet wouldnt be a problem if you chose to. Champagne yeast would be fine could even use cider yeast I reckon.

yeah id only fill it so far an see how it goes, wouldnt want a volcano of elderflower in your brew space ^^

Id see if there are any indications on the bottle about how much water to add, as i said before I believe its a ration of 3:1 but dont quote me on that

On the bottle it says it's super concentrated a ratio of 12:1 the only other ingredients are sugar, lemon juice and citric acid, by my calculations 300ml should make nearly 4 ltrs. Should I add a t spoon of yeast nutriant? Will I need to add any sugar?

I wouldnt bother with yeast nutriant I never have an my t/c has always turned out fine. Ive never used pectin either just use 100% AJ if your going to use AJ. Id say that if the dilute juice has sugars in it you wouldnt need to add any more sugar unless your after making something that is over 5%.

Hi Dave
I have decided to use grape juice instead of aj my recepie is as follows

2ltr grape juice
500g sugar
500ml boiling water
150ml super concentate elderflower cordial
Champagne yeast & yeast nutrient
Top up with water

I don't see why it wont work, do you?
