Doing it anyway but pedictive thoughts'd be nice (or previous experience). Knocked up 450g of blueberries (blendered to sludge) into 3 ltr of AJ with a view to adding 2 more ltrs Weds/Thurs just in case fermentation blows my airlock.
No extra anything and Allinson's bread yeast.

speaking of rasberrys in the freezer, i too had some stored away in the back. i simmered them, added kilo of sugar and a spoon of pectolaise, and then put it threw the juice. not wanting to waste anything i then used the cived rasberrys and stuck them in a dj with 3 jars of honey. both are going mwntal at the moment. one is seriously dark, deep red and the other is lighter. should be really good!

it breaks down pectin. pectin is the cement that hold fruit cells together. it causes jam to set, and for wine to either be cloudy or to have errery otherworldly floading blobs in it
