Maturing TCs

I bottled my first TC on the 17th and cracked open one today (28th) for a cheeky sample. The plan was to leave it over a month before drinking, but scientific interest (and impatience) got the better of me. It has lovely flavour and body, perfect carbonation, but is very, very tart. I was expecting it not to have mellowed yet, but to have done so more than this.

So, I was wondering:

How much does the maturing process affect the tartness? What's the optimum length of maturation?

lndger you leave it the smoother it gets. i like it dry, tart and with a akick. just like my women. longer you wait smoother it gets. just like a woman. so in short homebru is like woman. except when you drink from it, your stick it to the man and your denying gordon brown more tax pounds to go start another illegal war... excellent
