Evening all,
I've been brewing beers for 5 or 6 years now with good results, and now I fancy having a bash at TC. I don't like sweet ciders, I prefer something like Savana or Aspalls dry, any advice on how to make this style of cider using apple concentrate?

Dry is easy, as you just let it ferment right out.
1 gallon:
4l cheapo AJ ('from concentrate' OK), 1/2l something else to round out flavour - cranberry works
You also want some tannin, and if you don't have powdered you'll need to use a bit less juice to make room for a mugful of very strong tea.
Bit of yeast nutrient, a cider yeast.
Chuck all bar 1l of Aj into demi, wait 4 days, add last litre of AJ, wait until it clears, bottle, with 1tsp sugar per pint(or 500ml) for priming if you want it fizzy.
2 weeks warm 2 weeks cold to condition, drink (but better if you can wait longer)
This gives 5 to 6% depending on the juice used.
Takes owt from 10 to 20 days to ferment out - no need for the hydrometer: when it's properly clear, bottle.
If you use AJ concentrate (eg Suma), you can make it more appley, which is good, but it'll also be stronger. A recipe I've enjoyed is:
500ml Suma AJ concentrate, 1/2l Morrison's cranberry & raspberry, 1/2l Morrison's cranberry, 1/2l strong Yorkshire Gold, nutrient, yeast
Chuck it all into a demi, make up to about 3.5l with water, after 4 days top up to the gallon.
That's about 7%, mayeb 7.5, I forget - you can work it out from the total sugars
For larger volumes just scale up.

I will just say that even people who like dry cider sometimes find a simple TC recipe like this _too_ dry - mouth-puckering. I've only had this happen once (last Friday actually) and only really noticed it on the first few swallows. May depend exactly which juice you use. Just a tiny bit of non-fermentable sweetener, added at any time in the process, would take that edge off. But in general, both my wife and I like it fully-fermented-out-dry. We rarely buy commercial cider now, even the fancier stuff.
Lots of people use champagne yeast. Wine yeasts may give a funkier flavour. All yeasts produce drinkable stuff.
About 200gm (per gallon) of finely sliced ginger simmered in a bit of the juice for about 15 minutes then strained into the FV is a nice modification

Just bottled my first TC, tastes quite nice, 12 days fermenting at 20c using a champagne yeast, off to sunny France tomorrow so will try when I return. thanks again Oldbloke for advice.
