hi
had a go at a ginger beer in a 5 lt demijohn
used a couple of lemons a gurt load of ginger i zuzzed to a puld in a blender and a 100g or so of honey
bit of cinamons and a a 1 KG bag of sugar and a spoonful of champagne yeast
its bubbling like billio but i think i erred on the sugar and added twice what i should have
so
what do you reckon will it be turbo ginger beer should i split it and make it into two demijohs
or just let it get n withit and see what happens its not cost a lot but i would like to have something that was drinkable at the end

I'm no expert on 'other' brews but in the absence of other help I'd say check the alcohol tolerance of the yeast vs what you would expect it to make. 'If' it can't go high enough it could finish sickly sweet unless you dilute it beforehand.
However, diluting will split the sugar/alcohol but also the amount of flavour - if the yeast can cope then it may be worth just going with it and seeing what happens, then deciding later to dilute or not.

Just make sure you finish (or close to) the fermentation, a previous brew of ginger beer I did was exploding on a regular basis, had to don goggles and oven gloves to open the ones that hadn't. Fountains of Ginger, kitchen smelt lovely for days. SWMBO still brings it up!

I've just started a ginger beer using Hugh fearnley river cottage bloke recipe.
Once I converted up from his 2l recipe, 5lt required 550g.
I'd just started a tc using 400g so used rest of bag for ginger beer.
