jam in TC?

Post by ferry george » Mon Apr 08, 2013 9:41 am

This might be another dumb question, but could jam be used to add fruit flavour to a TC? To recreate something like Kopperburg fruit ciders, I don't like myself far too sweat but my daughter loves them.

It'd probably work, people make wine from jam.
But jam is set by pectin, so you'll need a hefty dose of pectolase.
And jam is pretty high in sugar, so it may come out a bit strong.
And of course it's how you control the ferment that determines the sweetness, not what you put into it.

Only if you consider it from the home brew POV.

Most commercially available type (off license type, not specialist supplier type) cider has usually been fermented dry, then they use artificial sweeteners to mod the flavour. Of course, they do use a mix of apples to mix/match the flavour for consistency/commercial reasons, but it's hard to tell, because legally they're only required in law to say whether they've used sulphites. Some do mention sorbitol, saccharin and other sweeteners too.

Home brew cider is notoriously easy to make, but equally notoriously hard to make....... well!

It's why a lot of TC's can taste like complete barf!, yet with a bit of meddling, they can come out excellent too.

Oh, and force carbonated generally......
