Has anyone got a recipe for some proper champagne ?

The guides I've seen on the net suggest a wine base so my ideas would be this -
Get a house of beavers wine kit
Use a champagne yeast
Brew to the degassing/fining stage
Add a sugar syrup solution
Stick it into champagne bottle cap with beer bottle crown caps
Leave to mature for 6-12 months

Will this work how do I stop infection over such a long period ....

Not a clue mate I dare say ill find out very quickly not a bloody clue how I'd get champers corks in

You can buy the wire cages to fit around the cork. I`ve seen them in a few homebrew shops. Perhaps you should try them!

I've seen these plastic champagne stoppers that you gently smash into a champers bottle then fit a cage on that will be
A) far safer
B) far more fun to fire across the room at the missis

So anyone got any more input into this

The wine will be okay with the high alcohol. I've got some red that has been sitting in Better Bottles for about 2 years. NEarly ready to bottle it :)

Personally I've been thinking about doing it but using a Corny, a chiller and a counter pressure bottler to do it instead. Seems like it would be easier.

So not degassing it and bottling before fining or anything else should be fine then.
And koonber your method will work too just be quicker and easier
