Can you add finings (eg bentonite) to elderflower champagne and give it a secondary fermentation? (I am planning to prime the bottles anyway - I left it too long in the demijohn)
Also, how much should you prime champagne?

Yeah I've used finings before with this and it worked fine.
Also primed with 120g for 15litres, that gave a good fizz rather than a rocket!
