for a little light relief I thought I'd make my biggest batch ever of TC this afternoon.

24 litres of T**co Pure apple juice
+1400 grams of Tate and Lyle cane sugar
+one full vial of WLP 775 from H&G (My first time using this yeast and as it comes highly recomended I have high hopes.....)

Gives me a cheeky OG of 1065 8)

should be fun!

First thing that i said was "F*** Me".

Work out how much sugar was in the apple juice then add on top the 1400 G's of sugar you added....

Just want to now how much sugar is in this bad boy....

I now work out the sugar in the AJ and then add as much sugar as needed for 1kg off sugar... but well hope you can see dude. ^_^ hehe

I think one word can aptly describe the resultant beverage: Fruity!

What have you had them ferment down to in the past? How do you dispense and do you have problems with it being dry (the cider that is)?

Hi anomalous_result- I'm going to let this one drop clear then stick it in a corny, to date my previous efforts have all finished at 1.000, and yes they have all been dry (too dry for my taste :oops: ) so my recent solution is to dilute the finished brew with apple juice in the glass when I serve, this adds sweetness and apple flavour but reduces the a.b.v, hence the desicion to make this one strong. The aim is it will ferment out to 8.7% a.b.v (cask strength!), and by the time it's diluted down with AJ in my glass it should be respectable 6% a.b.v. If I have guests round who prefer drier cider they can have it neat or with less AJ depending on their tastes.

My previous efforts have all been bottled and primed with 30ml per pint of AJ which IMO gives a little too much fizz, sticking it in the corny will give me greater control over this.

The apple juice starts off with a SG of 1.046 (I've found Tesco's apple juice to have this gravity every time I've used it to date) out of the box. With the added sugar it ended up at 1.065. Regarding adding 1400 g of sugar to the brew, yeah it sounds a lot but I'm making 24 litres of the stuff so while it will be pretty potent (8.7% a.b.v) it's not insane :wink:

instead of sweetening in the glass,why not add potassium sorbate when its finished (this prevents further fermentation) then sweeten to taste,keg it and force carbonate ,just an idea

Yeah thanks, thats another way round it 8)

however the way I'm doing it I'm not adding any chemicals and I've got the flexability to offer dry or sweet cider from the same keg, by either adding some juice at serving or not.

Drinking this one now, it's sitting in a corny in a fridge lightly carbonated, on tap within easy reach.........

At full strength its dry :shock: and 8.7% a.b.v

Cut with 100 ml of apple juice per pint is around 7.5% abv, very appley and sooooooooooooo easy to drink 8)
