Update: version 2 is almost gone, and version 3 was bottled on Sunday, in 340 ml beer bottles.

Old 11-ish
Fermented with 2 packets rehydrated Lalvin EC-1118:
10 lbs grocery store honey, stirred in following boil
3 lb DME, added for last 15 minutes off boil
2 US gallons apple juice, refrigerated, added to primary (helps cool down the hot fermentables)
7 g East Kent Goldings, 60 minute boil
6 oz shredded ginger root, unpeeled, 60 minute boil
1 Clove nail, 60 minute boil
1 Allspice berry, 60 minute boil
1 Juniper berry, 60 minute boil
2 coriander seeds, 60 minute boil
4 oz peeled sliced ginger root, in secondary, 90 days
6 oz oak chips, after 3rd siphoning, 90 days
tea made with 5 oz ginger slices, at bottling
80 g white sugar, at bottling
1 pack rehydrated K1V-1116 yeast, at bottling

I bulk aged it 11 months. It already tastes fantastic. I'll taste it after 3 months in the bottle.
Secondary FV: As yet unnamed Weizenbock ~7%
Bulk aging: Soodo: Grocery store grape juice wine experiment.
Drinking: Mostly Canadian whisky until I start brewing again.
