Just wondered, when is the right time to harvest apples to make cider?

I've noticed that here in the South, my apples have developed a 'blush', because of the last week when we've had high temperatures.

They eat o.k. (Golden Delicious), but are still very hard. I've read somewhere that the fruit should be soft. Will it make a difference to the flavour if pulped while they are in this condition , although they are ripe to eat?

A modmin will move it if necessary.

The fruit ought to be soft when pulping but this can be acheived by leaving it in the shed for a week in cardboard trays. The fruit essentially needs to be ripe, there's no mash so the sugar needs to be there already. GD are fairly firm variety anyway iirc, rather than your spongey types, so if you eat one and it tastes as sweet as an apple then it should be ok. Apples to me still retain some tang so don't worry about it too much and dive in head first!

Great thanks, that's just the answer I was looking for, may pick a load tommorow in between mashing and boiling. Would like to put some to cider before the weather turns s**t.

Need to contact a mate who has a shredder and press for next weeekend.
