I made up a DJ of ginger beer last night, kind of making it up as I went along.
500g root ginger
250g Demerara sugar
250g Golden syrup
250g maltodextrin
Zest of 2 lemons
Fruit from 2 lemons
2 tea bags
All above added to pot of water, brought to the boil then left to stew for a bit. Tea bags were then removed and the must was added to the DJ, topped up to a gallon. 5g Gervin wine yeast was started with 1 teaspoon of nutrient, then added to the DJ.
Smells great but looks like puddle water.
All bubbling away nicely this morning.

should be a nice brew, fwiw i think its a nice brew to use dme with too and perhaps? next time consider adding a TEASPOON(for a 5gallon batch) of chilli pepper for nice lil post sup kick just dont add a tablespoonful as that is a bit too much. after making the same slip up the brew was only quafable when diluted 50/50 with fruit juice and still left the lips tingeling

I did consider using a small bit of chilli. I was sure I had some fresh chilli peppers frozen in the freezer and thought about putting some in with the grated ginger...but the freezer was bare. I’ll try to remember and buy some for next time.
DME might be a shout though. Make it a bit more malty and beery, as opposed to like an alcoholic pop.
