Cassis

Cassis is fantastic

2 pints of blackcurrants
3 cups icicng sugar
4 cups of any 40% alcohol
1 cinnamon stick
2 cloves

Stick it all in a sealed container. Shake every week for 4 months. Strain through coffe filter paper and decant into fresh bottles. Improves with age.

Thought i'd dig this one up incase anyone fancied trying it. I made some for chrimbo (only a little) - 500ml wine bottle full to below the shoulder with slit (previously frozen) blackcurrants, 2oz sugar and filled up with vodka. Shaked it until the sugar dissolved, only a month in the bottle, strained, and tasted fantastic! All gone! Highly recommended, goes damn well with tonic and ice :D

Noy problemo. I made some sloe gin in the ususal manner and all my mates actually preferred the cassis! A tip I picked up from a mate's dad: any fruit/berries you've used to made liquers, don't throw them away! Bung em in the freezer and when you have a few lbs you can use them as a base for a decent wine/port. There's a great recipe for English port in C.J.J. Berry's First Steps in Winemaking.
