Hi mmm

Is this scrumpy a kit or just pressed apple juice?

Not really.... there isn't one :P
Original recipe here

On the basis of my experiments, the apple juice doesn't make much difference to the end result, so any generic from concentrate juice will do. I haven't tried using cider yeast, but ale yeast is much easier to use than wine yeast (it settles out much better). You can add sugar, or not depending on the strength you want in the end product. My expreience is that using brown sugar helps soften the edges. I generally use 25g of molasses sugar and 175g of demarara in 5 litres, which helps the colour too. So based on all that waffle...

Crossbow's TC

Buy 5l of apple juice (cheapest)
pour a litre into a sauce pan, put on a gentle heat, and add 25g of molasses sugar, 175g of demarara, still until dissolved (should be well before it boils)
pour 2 litres in to a sterilised demijohn, and shake
pour hot sugary juice in
add half a sachet of yeast (i've got on well with s-o4 and muntons gold, both give a great lava lamp effect, and settle well at the end)
stick an airlock in
Leave somewhere warm where you can admire the brewing :)
After 2 days add a further 1.5 litres of juice, sticking the leftover 0.5 litres in an airtight container in the fridge.
When its almost stopped (one or two bubbles through the airlock per minute) bottle using the leftover juice as a primer, or just rack it, pour in the leftover juice, and drink it :P
Theres probably a bit much priming sugar, so it probably wouldnt pay to leave it too long in the bottle (not a problem i've had so far :P)

Cheers the scrumpy I have made is from an old recipe I found in a book and is made from windfall apples from my garden.. thanks for the turbo cider recipe seems to be a lot less buggering about than this scrumpy lark ... Really would like to get some beer on the go but don,t know the first thing about it or where to start so if anyone could point me in the right direction or recommend any good books the help would be much appreciated as is the reply to my original post ..thanks for the warm welocome

CB Turbo Cider recipe:

4 litres cheap apple juice
1 sachet champagne yeast

Wait until it stops bubbling and bottle with 30ml apple juice per pint as a primer. Simple and effective.

The champagne yeast settles out amazingly and leaves a perfectly clear demijohn after about seven to ten days.
