Ginger Beer

Hi,
I bought a Ginger Beer kit for the Woman at the weekend, I was going to make it last night when I noticed that the sell by date was out.
Will it be ok?
It's a Coopers kit & the shop gave me a new yeast sachet.

How long does the ginger beer take till its actually drinkable? Im guessing it doesnt mature like real beer.

Hi,
It takes around 3 weeks & makes 20Ltr, Ive made the kit that you have to add 1 Tsp of ginger & sugar each day for 7 days but it's messy.

Its taken about 2 months for my Ginger Beer to totally clear in the bottle. I only know this because I bought a bottle in for someone at work who keeps forgetting to take it home. I held it up to the sunlight today and its clear from top to bottom. I finished my stock weeks ago.
