Beef and Ale Stew

I just cooked this Beef and Ale Stew from Jamie Oliver and it was really easy and really tasty.

I used a pint of Milestone Lions Pride but you can use Ale, Stout or Porter

Not sure what J.O. knows about ale, .....but happpy to try a bit of the Black Shape Ale with recipe, it looks good.

He grew up in his parents pub so maybe a bit more than you'd first assume..

..although I quote from the ingredients list "ale, Guinness or stout", so maybe not!

Made this the other day. Substituted the celery for 2 sticks of leek (hate celery), used a bottle of Guinness as per recipe but also added 2x diced medium potatoes. After frying off the ingredients as per the instructions I cooked it on my slow-cooker for several hours, added some dumplings to the slow-cooker and after 30 minutes removed the lid and put the pot into a 200c oven for 15 minutes to brown the tops of the dumplings.

I have to say that it was absolutely delicious! Looked spot on with the photo on the website too. Me and my mum devoured virtually the whole pot between us (and I'm seldom a big eater), both of us going back for seconds! I was amazed at how rich and sweet the sauce was considering that it was a bottle of Guinness and a heaped tablespoon of flour, it was an absolute winner for me.

The only thing I will say is that it won't feed 4! It really needs to be served with maybe some mash and yorkshire puddings if you want to stretch it out to 4 people but if serving as stew and dumplings alone then you'll find that 2 people will polish almost the whole lot off in one go! :P

Guinness does make an excellent stew but you need to make sure you cook it for a good long time otherwise it can have a bit of a sharp taste.
I can recommend Deliah's Beef and Pickled Walnuts in Guinness if you want to make it a bit posher - can't remember which of her many books it is in.

ADM's Black Dog Stout in a beef pie is absolutely amazing, makes it very velvety.

My secret weapon when making steak and ale pies, is Theakstons old peculiar. Works so well, I think I know what I'm making tonight now.

Just stayed with friends and she did her version. She added a substantial amount of blue cheese at the end................fantastic!
