Mojito Ice Lollies

It's a bit girlie and it's never going to be sunny enough but I realised I had all the ingredients to do this and an ice lolly mould kicking around. Might be good for her indoors.

Juice of 8 limes
300ml water
a handful of fresh mint leaves
100g sugar
2 tbsp light rum


1.Pour the lime juice and water into a jug and leave for 5 minutes.
2.Add the mint, sugar and rum.
3.Blend all of the ingredients until thoroughly mixed.
4.Pour into the mould, stick in the freezer and drink a cold beer whilst you wait for them to set
5.Pop one out in, perhaps, September when they weather is better
