not sure about sauerkraut but reading up on the pretzels they serve at octoberfest they dip them in causic soda before baking??? how bad does the sauerkraut smell???

I've made it a few times now, it's good stuff.

I make it often.
I add mustard and caraway seeds.
Lovely, and good for you.
I'm very open to suggestions for other salt based pickles.

Although I've also just been given John Campbells book.
There are always more books than time available.

... preserving some lemons (link) is worth well more than the time/effort involved in preparing them ... the flavours they add to tagines, casseroles, curries, even fishy pasta dishes are amazing

ive made it , just cut up cabbage and added salt into jars into layers... was properly nice.. will make some mroe soon
