I went to a farm shop yesterday because they make the best sausages I have ever tasted. Chatted them up nicelyand broke the bank. On the way out swmbo noticed all the pheasants hanging up outside and a couple of really ripe geese on a window sill. I stroked and admired them a bit and then the farmer comes out and says that they've been hung for a fortnight and need eating and I can have them for nothing.

Very ripe so I decided to just breast and leg them because I thought they mifght be a bit ropey and I don't like to have my gravy too ropey.

Turned out to be two huge breasts on each bird, better than any wild gees I've ever had, pan fried and deglazed with red wine, shallots, celery and lots of parsley, it doesn't get any better.

Still, if I'd had a bit more time and bottle and plucked and roasted one I might be even happier.

I must say for any of the critics that when you eat game you can appreciate the bird lead a good life... unlike those poor Vietnamese/ Polish chickens they stuff in all the processed foods :(

How did it turn out orfy? Makes me hungry for some of Mum's game pie :)

Wonderful, we just roasted her and had her for a pull apart snack while I was brewing.

Main course was the guinea fowl with parsnips and mash with gravy.

I have never seen more pheasants in my life than four days rambling
the Cotswolds. I wish we had those kind of bird numbers here.

It was interesting to watch a few pheasant hunts.
