Recipe for North Staffordshire Oatcakes

This doesn't quite fit in with the topic description but at least it uses yeast and they do go down well with a pint. :lol:

For anyone else who fancies having a go - they are worth it

For one dozen oatcakes...
8oz fine ground oatmeal
4oz wholemeal flour
4oz plain flour
1tsp salt
1tsp sugar
1/2oz fresh yeast or 1tsp dried yeast
3/4pint lukewarm milk
3/4pint lukewarm water
vegetable oil

Work the yeast into 1/4 pint of the liquid, add the sugar and stir well.
Leave in a warm place for 10-15 minutes until frothy.
Sieve the flour and salt together into a warmed bowl and add the oatmeal, stirring well.
To the yeast mixture add the remaining milk and water.
Make a well and gradually beat the liquid into the dry ingredients.
Cover with a clean damp cloth and leave to stand in a warm place for 1 hour.
Oil a frying pan and put onto a high heat. Drain the pan, spinkle in salt and wipe clean with a cloth. Ladle some mixture into the centre of the pan.
At the right temperature bubbles will form.
Cook until browned, flip it over and press down lightly.
When cooked place on a wire rack over a bowl of cold water and then stack.
To be honest, its the Mrs who makes them in our household :lol:

Nice one, we are having these for breakfast mid brewday on Sunday, even mini Wez is going to love them. I'll let you know how I get on!

How did the oatcakes turn out Wez ? kaz made two dozen at the weekend just gone and they lasted all of about ten minutes. :D

Persuaded The Dragon to make these today; very nice, with cheese beans and chili. An authentic Clayhead supper 8)

Oatcakes are already well established as the only "delicacy" to originate in Stoke-on-Trent. I believe a local by-law has been passed, which states that they can be filled with anything, but cheese must be included:

Oatcake menu -

Cheese & beans
cheese & bacon
Cheese & spring onion
cheese & ham
Cheese & black pudding
cheese & tomato
Cheese & cheese :wink:

I shall be having them for my tea with bacon, cheese and canned tomatos as i have been doing on a friday for most of my life. (it is actually a law in stoke-on-trent to eat oatcakes at least once a week)
They are the best thing about living in the potteries. Every morning on your way to work the smell of oatcakes cooking fills the air and the taste of them is just as good as the smell.
A lot of major supermarkets across the country do actually stock them these days but they are never as nice as the ones you get from a proper oatcake shop.
They are actually nice with unorthodox fillings like salad and cold meats. I really like them with a chicken tikka sandwich filling and salad. They are also nice with any cold curry (great hangover cure).

After todays cancer scares they'll be the ONLY ones with customers in !!! :lol:

Bacon shops,off licences, butchers,they're all down the pan now-----------

Lardy cake ( whatever that is) never got a mention, so must be ok to eat THAT-------------------

Gave up smokin about 2 mnths ago, but if we listen to that lot, you would never leave the house ,! You'd not get cancer,the stress of worryin would give you a heart attack anyway !

We all gotta go sometime, when its your turn,its your turn ! I'd rather die
:) than give up bacon sarnies, no chance !!

They're never happy are they? " Too many people living longer ,putting a strain on state pensions etc" moan moan,why not just give out free bacon ,red meat,whisky, and 20's of Capstan Full Strength ?

Life is about it's quality not how it ends.
