"Lancashire hotpot" style but beef stew /pot

"Lancashire hotpot" style but beef stew /pot

Dutch oven or a slow cooker works well here.

2 pounds of roast beef, cut into thin slices, across the grain, pound them very thin, flash-fry in oil, season with pepper, salt, set aside

Fry a few onions cut thick in a same fat until golden sweet and soft.

Place beef and onions on the bottom of slow cooker etc, cover with thinly sliced potatoes, loads of them, a carrot, any root vegetables work here just fine, parsnips, swedes, etc

season with pepper, thyme, a few bay leaves, some worcestershire sauce, a beef stock pot, your favourite beer until potatoes are almost covered.

Cook in the over (or slow cooker) with a lid on until beef is tender then w/o lid to get some colour.

Simple tastes are the best.

Thanks for sharing that, I haven't had Lancashire hotpot in some time and the thought of it is making me hungry :)
