Boil evaporation

I am confused. I am boiling 27 litres for 90 minutes and getting less than 19 litres left at the end of the boil. I thought boiling lost about 10% volume. How much wort do hops soak up as I am finding it hard too get my water calculations correct?

1Kg of hops displace 1L of wort and absorb 15L

Practical approach get some old hops and add them to some boiled water. allow them to soak for a while, then remove them, and measure the volume.

Or add the hops to a known volume of water in the kettle allow to soak, then run off from the kettle

In fact both methods would be best as you would find the amount absorbed by the hops and also the amount retained by the boiler.

Evaporation rate depends on a multitude of factors (see other threads today :D), but again put a known volume of liquid in the boiler, and boil for a known time, measure the qty in the boiler.

Of course water at 100C occupies 1.04 times more volume than water at STP, so Ideally you measure the volumes at the same temperature, (I'd go for just before boiling)

Woops didnt see the thread on evapoation. I will read it now. That will teach me not to do a search before posting
