A few questions??

I am fairly new to grain brewing and have so far successfully made my Dad's version of Harveys real ale, with Goldings and N.Brewer hops and I also made the Grolsh and bottled it from 'brew like those you buy' book. Both turned out really good.

I really wanted to make a Guiness and bottle it but the shop didn't have any Bullion hops so I gave up and bought the stuff for my Haveys brew.

My questions are-
1. Where do I get the Bullion hops from?
2. If I were to put my Guiness brew in a keg how do I get the smooth Nitrogen bubbles in it. I have a king keg with a floating tap thingy?
3. What is the advantage of chilling the wort?
4. How do you carbonate beer/lager? I have a Co2 bard cylinder which I add to get the last of my ale out of the keg but I wonder how you get the bubbles into the actual beer?

1. They don't seem to be available in the UK stores. You could try another variety.

2. Very difficult to do in a king keg as it's not designed to take the pressure. You can do it in a corny keg with a mixed gas cylinder.

3. It precipitates the hot break better making for a cleaner beer. You get better hop aroma from late additions as otherwise the aroma gets driven off in the steam. For lagers it decrease the amount of DMS in the beer so it smells less like cabbage and more like beer.

4. You either prime the beer with sugar which the yeast converts to CO2 and a bit of alcohol or you apply CO2 as a top pressure from a cylinder which gets absorbed in the beer.

Midget Widget do a 70/30 Nitrogen / CO2 cylinder which I have used in the past with a Rotokeg and king kegs and it does work to some extent . . . It would work better in a corny of course as you can carbonate to Higher pressures . . . They also do Helium for balloons, and as a push it can be used to dispense with . . . The real problem then is keeping the head in the glass, and wiping it of the ceiling is quite tricky :D

I'll post it up tonight. Very easy and really nice, even my mates who are hardened lager drinkers (yobs) like it!

according to beersmith there are substitutes;

Substitutes: Chinook, Eroica, Brewer's Gold

youd have to adjust the quantity though to match the IBU's

My Dad's Harveys Recipe-

3kg Crushed Pale Malt
450g Crystal Malt
60g Goldings Hops
60g N. Brewers Hops
1kg Brewing sugar
Gervin Ale Yeast
Irish Moss
1 1/2 Tsp Gypsum

How do I work out IBU's?

I went on the Harveys brewery tour week before last, really recommend it to anyone, long waiting list but you can drink as much as you like and its really interesting!

Bloody hell you actually managed to get a tour! Very impressed. Last I heard it was a three year waiting list. I met the head brewer once (you can get yeast from them). Seemed like a very sound fellow 8)

How long did you have to wait on the list?

It was a two year wait for the tour.
Really good, yeah they said they would sell grain, hops etc as well if you asked nicely.
I had quite a lot of harveys and then the guy got the Imperial Stout out, really nice, I got a free bottle to take home too....hic
I'd love to make Imperial Stout but the 18month conditioning time puts me off.

I've bought grain off another local(ish) brewery, but I just assumed Harveys would be too big to sell grain and hops :roll: Thanks for letting me know, I may make enquiries :wink:

Btw, try their yeast if you haven't done so already, it gives a spicy kick to your homebrew, like Sussex Best has.

I'm going to add my name to this damn waiting list as well :D

I tried to get bullion and was told to substitute Galena, details of which are:
Galena--Use instead of Bullion
Strong and Floral-Good kettle hop
Alpha acid around 14%

I've tried it with the David Lines Guiness recipe and it's perfect!

I made a Guinness Draught Clone 6 weeks ago and replaced Bullion Hop with Northern Brewer with good results.
