Fining before Corny?

Hi all.

I've got my first corny on the way and my current beer is patiently sitting in the secondary until it arrives.

Now, the gravity of the beer has been pretty static for 4/5 days so I'm thinking it has finished fermenting. However it is still quite cloudy so I was thinking of using some finings to clear it up a little. (I have a packet of Beer Brite lying around)

What procedure should I use? Add the finings to the secondary and rack to the corny after a day or two? (Also, I can stick the secondary in the garage which should drop the temp quite low - which might also help with clearing I suppose)

Generally speaking, cooler temperatures will help with the clearing process. Just follow the instructions on the Beer Brite (which I believe is isinglass). If you're using a glass secondary you should see the finings compacting quite quickly. Within a day (or two to be safe) it should be ready for racking.

Its my general understanding that Isinglass works best when cool (below 16C and above 4C) gelatine works at any temp, but the best results happen just before freezing point is reached.

Although, some of these isinglass based products sit in a shop at room temp for months on end. so they might not be as tight on temperature control as pure isinglass (which can quickly loose its fining power during wrm storage)

cool temps will naturally cause a large amount of yeast to fall out of suspension reguardless of finings. again the colder the temp the greater te effect.

I've changed my process recently, and now add finings to the secondary, I crash cool the beer, then gently stir the finings into the top layer of beer, with out splashing and disturbing the yeast sediment. When Bright transfer to corni

yes the theory is to fine on an upwards temperature gradient.

example bottle conditioned beer

Crash cool (throw fermenter outside at 5C overnight)
transfer to secondary
add finings (beer is now at 5c and wont be cooled futher)
bottle condition or cask condition (you can bottle the beer and allow the temp to rise to 10-15C to allow the yeast to work)

example Lager

crash cool (in a chest freezer to 0C)
add finings (mix in geletine, sol silicate bentonites whatever)
lager at 0C
serve at 5C

I'm not sure if Beer Brite contains isinglass. I think it just contains gelatine and collagen....
