One thing I've always wondered and never really found an answer to:

It's common advice to let the boil sit for a while after the flame or power has been cut so as to let the hops form a filter bed for the hot break. Does the extra time at the end count in the boil time when making hop additions? I.E., if aroma hops are added in the last minute, then the pot is allowed to sit for 15 minutes, do the aroma hops then turn into flavour hops? Is extra bitterness extracted from hops while sitting in near-boiling water, as opposed to a rolling boil?

Depending on how long it takes to cool your wort they are going to get much more than 15 minutes.

If you are worried then what you could do is add the aroma hops in a hop bag. this way you can remove them whenever you want but still leaving all the other hops in the wort to act as a filter bed.

Hops are my weak point when it comes to brewing and I need to experiment a lot more with them. In general I have only really used Goldings and Fuggles (have used other but not enough to really know what they add to the beer)

Jamil aka mrmalty claims the best hop aroma from late hops comes from chilling the wort as fast as possible with an immersion chiller so they do not have their volatile aromatic oils removed by the heat.

I personally would not recommend letting the boil sit.

Because of the same concern you cited, Mysterio, I usually kill the heat, let it stand for as long as I want my hops steeped, then remove the hop bag and turn on the chiller. I guess it only works if you use a hop bag.


SLIGHTLY OFF TOPIC QUESTION:
Do you guys just add your hop pellets straight to the boil? I've always used bags. I was just curious cuz it seems that some just add them to the boil and then let them separate into the hot break or maybe the trub in the primary? I always thought you weren't supposed to let any hops into the primary.

You can only use hops as a filter if you have a hop strainer though.

What I used to do (when using extract) was to put my hops in a grain bag. This gave them the pleasure of bouncing around in the boil and I could just lift out the grain bag when I was done. Best of both worlds....

Now I have a hop strainer so just dump everything straight in.

If I am lucky I get to sleep in till abount 6:30 on a weekend. It has even been known for me to sty in bed until 7:00am, Past that is practically impossible since that is when the little one gets up (17 months (yesterday))

they say that you should sleep when they do , i thought it was good advice until i nearly crashed the car on the M5 ! :lol:

Had me inanely giggling in the office..... Lucky that nobody else has turned up yet (9:30am and it's still just me.....)
