Hi all, I've just received a pot of the pH5.2 stabilizer stuff and have read the usage instructions twice now without proper understanding. Probably doesn't help that they're in American (different gallons, terminology...)

It says 'use ... at a rate of approx 1TBL/5gal of water ... based on the total volume in the kettle'

Now, 5 USGal = ?? UK Gal

and

when they say 'kettle', do they mean the vessel that the water is heated in for the mash, or the boiler volume? Initial or final volume? Seems to me that the mash volume would be more important, but...

So, how do you use it?
