Maltose Syrup

Post by Paul Stevenson » Sat Jan 05, 2008 1:53 am

I have a recipe for Daniel Thwaites Best Mild which calls for maltose syrup, but I can't find any. What could I substitute for it? I made a brew last year using 1900g Dark Malt Extract, 600g Crystal Malt, and 150g Chocolate Malt, plus 400g raw sugar instead of the maltose. It wasn't too bad, but lacked body. Would more malt extract help, or perhaps some torrefied or flaked barley? It was also a touch too hoppy. I'm looking for something fuller and smoother than what I got.

So would that be a 1:1 replacement? Does syrup produce more extract than grain?

If its made from maize then corn syrup is probably the same.
