Difficulty Getting my PH Correct

Just put a mash on this morning and couldnt get my PH low enough.

This is the first time i've measured the PH and it was above 5.5 the highest my papers would read.

I have a very soft water with a Hardness of under 20 PPM and Calcium of 17 PPM.

The mash had 5Kg of Light Malt, 250 Grams of Crystal and 250 Grams of Torified Wheat in 14 Ltrs of water at at temp of 67c. I added 13 Grams of DLS as per Burpaks site.

Do you think I added too much DLS and what should I do next time

Soft water should have the opposite effect, i.e. pH too low. So I'm not sure what's going on there. :?

What have you added to the water prior to the mash? EDIT: Sorry, you did actually say that. :oops: It does sound as though it's the water treatment causing the pH to be too high, so yes, use less next time. The best way would be to add it to the mash a little at a time, while checking the pH.

Being from Preston I have the same water supply as yourself, and don't have any problems with regard to the PH.
I usually carry out the water treatment stated in Brew Your Own Real Ale A Home, however I have omitted this stage on numerous occassions with the same results.

Look forward to hearing from a local brewer

Add lactic acid or use 5.2.

There is something that does not add up there. There is no way that your mash pH should be too high under those conditions. You certainly have not added too much DLS. My immediate response would be to suspect the pH papers, but that is highly unlikely. Are you sure that it is not off the bottom end of the scale and not the top?

No not off the bottom at all. My papers are 3.8-5.5. Was reading 5.5 or above, I am used to using testing sticks with my Fish tank.

Daab, what is regarded as too much Gypsum??
