Quick Fermentation

Post by booldawg » Tue Feb 05, 2008 5:43 pm

AG#1 has finished fermenting after 3 days in the FV. Not sure of the TG as the hydrometer has hit the bottom of the FV at 1010, so somewhere below that. I'm amazed at how quick its fermented out as opposed to kits.

My dilemma is when to bottle. I don't have the safeguard of an airlock to keep out air borne bacteria as I use the 'lid cracked open slightly' method. I'm also thinking that it'll do the beer good to be in the yeast for a bit longer. I intend to bottle condition as I dont do secondary fermentation in a keg or FV.

What'd be the latest I can safely bottle? bearing in mind any activity has stopped as of today.

Personally, I'd leave it on the yeast for at least another 2 days. Must admit, If I'm bottling I always rack into a secondary fermenter after this to allow more yeast to drop out. You don't really need a shedload of yeast in there to get the carbonation you need in the bottle.

leave it another week i reckon, then prime as normal.

regarding your lid-cracked-open, you'll have to be careful that oxygen isn't permitted into the FV.

He he.

I presume it goes something like this:

*BANG*

"Err. Oops. What a mess."

Can't be giving off too much CO2, but as I'm out at work all day I wouldnt fancy my chances! I must convert FV to take a bubble breather for instances like this.
