My EKG/Styrian Golden Ale is fermenting nicely. I have a question regarding serving it through the engine. What if I were to rack it close to the end of fermentation without priming in the corny. There still would be some remaining Co2 in solution. I wonder if this would be ample?? I usually rack with about 2.5 oz. of sugar and gelatin finings. Thoughts?

Do you mean, carry out the last few points of fermentation in your cornie, rather than letting it finish in the FV, racking over, and using sugar to prime?

No reason why it wouldn't work, only problem is you're more likely to carry over a big pile of yeast, and thus more likely to suck traces of it up when you're drawing off a pint. I think i'd be more inclined to stick with your original method. It's not like you're going to speed things up anyway - it's already going to be a beer that you'll be able to drink fairly quickly.
