Strange Vinous Flavour

Hullo.

Last weekend i sampled my brew, and it tasted wonderful. A bit green, but good. So i thought, i'd have a quick slurp from the barrel today.

I've noticed a marked increase in pressure in the barrel, and an odd vinous flavour. The brew still smells great, but has this odd flavour to it. It doesn't taste like acetobacter.

The brew has cleared wonderfully and has OK (but not great) head retention.

Any ideas?

Vinous, you say. Possibly a wild yeast, like Brettanomyces? Brett leaves a vinous taste and tends to attenuate further than Saccharomyces.

I would tend to say, let the beer age a bit before you judge it.

What's the brew?

It's a mild, i don't have the recipe to hand.

I suppose Brett would explain the sudden excess pressure in the keg. It'll be my first real infection to date, i suppose.

was it fairly low in alcohol Max? more chance of getting something in it.

It was about 3.5% give or take.

Deffo sounds like Brett, I've experienced it in some of my low alcohol concoctions :cry:

Just tasted this again. One thing led to another, and i'm having a pint of it along with some liver pate and crusty bread.

Bloody marvellous it is. Easily my best AG so far. Perhaps do a bit less crystal in my next go. And hopefully not muck up and collect the proper volume so i don't end up with only 15 litres...
