strange tastes, help please

Hi, my first all grain has suddenly developed a sour ish taste. its been in the pressure barrel for a week and a bit, and up till about 2 days ago, it tasted great. whats gone wrong?

That doesn't sound like good news, I'm afraid. An infection may have got into the beer.

If that's the case the only answer is to sling it and thoroughly clean and sanitise all your kit.

Has the temperature changed in your storage area? That can affect the perception of bitterness.

thats a shame. no temp changes other than a gradual cool down with weather. with some of the kit beers we used to make, sometimes it would get a TCP kind of taste, which having read through the forum, i put down to residual sterilising solution, so everything gets rinsed at least 3 times now. but this is definitely a more sour kind of taste.

The TCP taste, that's what I used to get, but thanks to the pros on here I got rid...... :D :D
Use half a campden tablet in your mash liqueur and half in your sparge water, leave to stand for 15mins and it removes the chlorine that reacts with the hops that causes the TCP taste.
I think that it's anyway, sure somebody will sort you out on here!! :wink:

Did you let the barrel get low on presure :?: If there's not enough pressure to dispense, you could end up sucking air into the barrel when you open the tap. I did this once and within a day or two the beer was off.

the best solution to not getting sour beer is to drink it all on the day you crack the barrel. :lol:

there are plenty on here who would give you constructive critism of your beer though their palates are not as good as they used to be and they may have to quaff half a dozen before making their judgement :lol: :lol:

Sounds like some air (with some helpful Belgian bacteria) has got into the barrel somehow, which has brought about the souring.

Do you apply CO2 to your barrel for dispense, or have you been opening the keg to dispense?

after priming the barrel, there was plenty of pressure to dispense the beer, so im 99% sure no air got in. it really frustrating, as all went really smoothly for my first all grain, and a week after it had been in the barrel it tasted really promising, much better than the muntons kits we have done before. the taste just seemed to change over a couple of days
