Best Bitter.

About to do a BB shortly, thought I would post my recipe. Some may find it a bit "hoppy" for a BB, and I substituted a bit of crystal for some cara Munich for a bit of interest, which is out of style, but see what you think. Comments, critiques and adjustments are all welcome.

4.1 kg Maris Otter
350 gms Flaked Maize
100 gms Crystal 60
100 gms caraMunich III
25 gms Chocolate malt

Target 10 gms 60 mins
Challenger 25 gms 60 mins
Fuggle 20 gms 15 min
EKG 20 gms 15 mins
Fuggle gas off 10 gms
EKG gas off 10 gms
Fuggle Dry secondary 7 gms
EKG dry secondary 7 gms

Irish moss
Wyeast London Ale 1028 (2 litre)

OG 1.044
FG 1.011
Colour 11 SRM
Alc. 4.3 %
Bitterness 33.6

33.6 IBU seems right in the range for a best bitter - with so many late and dry hops there should be a good hop aroma and first hit but shouldn't be over bitter.

I've looked at doing something similar but using a dark crystal in place of your Chocolate to try and give a rich red colour - I've never managed a true ruby ale, always seems to come out brown!

Go for it and good luck

I know what you mean Confused, I think many of those ruby beer photos are shot with the light behind which helps show the ruby..ness.
I think you are on the right track with the dark crystal though.
