Hi,
The next brew I do is going to be Jim's Black Sheep clone, I've got windsor, Safale-05 and Safale-04, what would be the best choice?

Of the two I'd go for S-04. When I've used US-05 it has left the beer tasting fruity, sweet and creamy, not what you want for Black Sheep, which I recall having a refreshing hoppy taste. I guess the best dried yeast to use might be Nottingham, which would let the hop character through.
Didn't notice the Windsor, others might want to coment on it, as I'm biased against it, not on taste grounds, but due to it resulting in a lot of sediment in bottles. Was OK in keg though.

strange i've had the exact opposite experience of US-05, i've found its leaves it nice and dry and that it also lets the hops shine through (much more so than nottingham)
