I had a bit of a disaster last brew after trying to treat the mash pH with Calcium Carbonate so I'm going back to basics as a control.

3.75kg pale malt
250g Crystal

Hops to be decided on the day, but aiming for around 23 IBUs 8)

Whitelabs English Ale yeast (starter getting a bit out of hand now! :shock: )

For water treatment nothing apart from half a campden tablet to remove chlorine/chloramine. pH will be a bit low, but I've brewed this way plenty of times with perfectly good results - I just need to make sure the mash temperature stays on the high side.

Boiling now! 8)

All's gone well so far - kept the mash temperature between 66C and 68C throughout.

me too Jim, except I forgot to change my clocks and my brew got underway at a nice 4.30, great...

DAAB, we're only 20 minutes drive from South Shields. :wink:
