:? Hmmm. There's been no reaction from the yeast, despite pitching it five hours ago (I just sprinkled in in :oops: , as has worked fine in the past); usually safale is pretty quick to get going.

Assuming it hasn't started tomorrow should I give it a stir, or perhaps I should rehydrate some other yeast and bung it in (I have a packet from a brupaks kit somewhere, or could pop to the harveys brewery for some yeast if neccessary).

What do people think? I'm on new terratory here :( I hope I don't have an infection :shock:

Phew, it is covered by yeast head now - not a huge amount but at least there is evidence it's working. :P

I always have that worry.

My stout that I have just made took a while to start - actually it probably took just as long as normal to start, just my impatience making it seem longer....

It did get a small head and I guess it was doing enough. I just guessed it was too cold in the room.

Several hours later, the head was amazing - best I had ever seen on any of my beers. It took about 36 hours to get to this stage. The beer is now ready for racking....

I am brewing something very similar to yourself at the moment with the same yeast. I have found the the safale s 04 doesn't produce a large yeast head (I have noticed this in the past also). I prepared a yeast starter from some wort (as per Jims instructions) and this was bubbling away quite the thing but once I pitched it I didn't notice anything until the next day.

I am no expert, and I will probably be corrected by someone with more knowledge, but I think the yeast begins with some aerobic fermentation to begin with until the oxygen has been absorbed/digested and then it converts to anaerobic fermentation when it goes hell for leather after the sugars and this is when you will see the head being produced (I'm sure I read this in a Graham Wheeler book).

It will be interesting to compare notes when our brews are ready. You are using a bit more pale malt and different hops but they are similar other than that.

Hi Calum

It'll be interesting to hear how your beer turns out - I often wish I could try the recipes made by members of this forum.

My understanding of how yeast actually does it's thing is rather weak, so thanks for your comments :)
