Hillbilly's House bitter

I made the above recipe 3 weeks ago to Hillbillys site instructions. I am tasting it 3 weeks later and found it a bit on the bitter side. Looking on Hillbilly's site it calculates the hops based on a 20% hop utilisation. Since I made this brew I have looked at other calculations and most tell me that for a 90 min boil 27% should be expected. this means that I could have used 22g more hops than required during the boil.

Does this explain my over bitterness or should i give it more time??

bottle or keg it and taste it each week, you will either get used to it or the general bitterness will subside and round off, unfortunately so will any flavour/aroma to a certain degree.

I normally leave mine for around 6-8 weeks before I start drinking mine, it has usually mellowed somewhat by then. I do like my beers on the bitter side though.

I like Garth's approach. To paraphrase: It'll either get better, or you'll get used to it :D :D

And i think, a bit of both tends to happen! If you drink them too early, you get used to them, but by the time you reach the bottom of the keg, they've normally got a LOT better. They're a bit like women. You normally miss them when they're gone!

I`ve always thought my beers improve as the barrel goes down.
