New Years Golden Bitter

I've been informed that there may be people coming over for New Years Eve. I've got my Best Bitter done, although the dry hopping didn't work. I couldn't get a proper seal on the keg with string coming through the lid. So, I'm planning a Golden Bitter as well, dry hopped with probably EKG. I've got an idea to use marbles along with ping pong balls. That should keep the hop sack afloat without sinking to the bottom and clinging to the out tube. Now in regards to the recipe, I'm thinking about using torrified wheat. What percentage is best to avoid any haze problems? Recipe is going to be pretty simple. Pale malt, light crystal, wheat. Hopped with Boadicea and EKG.

Unless it's a belgian or wheat beer, I would use somewhere in between 5 and 10 % for a bitter, I used 10% in my Nelson and it was crystal in the bottle

I'd be very wary about using ping pong balls. I used to remove indentations by popping them in boiling water. On one occasion I put a couple directly into the kettle, then subsequently used the same water to make a cup of tea. This tasted absolutely disgusting due to the balls having strongly flavoured the water.

Hence its old name of wiff waff, with the stress on the wiff :^o

Alright, I've ditched the ping pong theory. I'll just load up a bag of EKG and chuck it in. Anyone use Safale-04 in a golden ale? I'm wondering if I should use 05? For bittering I'm using Boadicea.
