When the boil is over, do you leave it to settle for 20 min before cooling or is it the other way around.

when the boil finishes i usually leave it to settle for 30 mins then cool it, today i will be switching the boiler off , running to my car , tearing up the motorway to get my son then coming back (about an hour later) tehn cooling . unbelievably i have done this before and it was fine. before i had a chiller i left it to cool overnight and it was still fine. as long as its covered and you give it enough time for the hops to settle it will be okay. i may have knocked my hop strainer off the tap though so that should be fun. :)

this lot i just made was based on a recipie for brown ale except i made it a little stronger and darker, ive just tried the brown ale i made a few weeks ago from the original recipie and its milk stout ! so ive inadvertantly just brewed some darker heavier stout . goo djob i like it eh? cant see why it went wrong(ish) i followed the recipie exactly and it was one from a dave line book . weird :?
