I don't know how much general interest this will be but I was surfing for some brewing science knowledge and I found this free download. It's a very very acedemic book I've seen on sale for up to £200. Heavy reading but I'm guessing the answer to most things will be in it if you look long enough.

Having read a bit more, it's very detailed about the commercial brewing process but lots of it looks applicable to the home brewer too. Especially given the ingenuity and resourcefulness of some of the brewers on here.

Absolutely fantastic !!! I had just got my sleep patterns back to normal but this little beauty will seriously put me back into the 4 hours a day sleep pattern. Thank you. A must for everyone. :D :D :D
