Yesterday I had the afternoon free. I took the wife to work at lunch and had to pick her up later so I had 4 hours to brew. I wanted to do a session ale. In the time available I had to figure a recipe, clean kit, brew, clean the kit and put it away. I wanted something along the lines of a old style Bodington's cask ale. Obviously it need to be a stock cupboard recipe. And I had to be smart with a time saving schedule.

This is how the time went.

I put the water on. just 10l enough for the mash. Then I checked my stock, did a little recipe research and formulated the recipe with recipator. Worked out a mash volume. Weighed the grain.

Time 20 minutes.
Mashed for 40 minutes at 70c . 3.7kg grain in 10l water at 77c
Put the first runnings in and started the boil with first hops.
Bach sparged with 23L down to 1006. added to the boil.
Time to rolling boil 30mins (20mins from last wort addition)

Total time so far 1 hour 30 minutes
Boiled for 1 hour.
Time to chill 30 minutes
Rack to fermenter Aerate and pitch yeast 20 minutes

Total time - 3 hours 20 minutes.

OG: 1.040 FG: 1.010

3.9% v/v (3.1% w/w)

3.07kg British pale
0.23kg Dextrine malt (Cara-Pils)
112g British crystal 50-60L
28g British chocolate
Mash: 86% efficiency
10L 67c for 40 minutes strike temp 77c
Batch Sparge with 23L strike temp 77c
Top up boil to 30L
Boil: 60 minutes SG 1.031 30 liters
I added 25g NB with first runnings to kettle.
Hops: 25g Northern Brewer (8.5% AA, 60 min.)
25g Kent Goldings (5% AA, 45 min.)
25g Northern Brewer (aroma)
Yeast: Youngs Ale yeast

That looks like a bloody good job Orfy.

I realise that there has been much discussion before but does a 40 minute mash allow enough time for all the required conversions?

Re conversion in a short mash; did you do a starch test?

I only ever did a mash starch test once and that's on my first brew.
I'm a sort of show me then I'll believe it type guy. It worked so since then I let the force guide me.
After I started the boil I did put some more water on the mash and the runn off was 1006. Previously I've done that and it's been 1012. I Did a thinner mash this time due to it being a shorter mash time and a smaller grain bill. (Other wise I'd be doing a lot of sparging) 2.7-1 instead of 2.6-1
I'll not tell you my efficiency but if any one wants to figure it.
I got 1033 preboil for 28.5 litres from 3.7kg at a potential of 1040.3
Lets just say I'm happy with it and will probably stick to <1hr mashes from now on.

I think just for curiosity next time I'll do a iodine test at 30, 35 and 40 minutes.

It's in secondary now. I'm going to sample it later.
