Fruit beer

Post by mysterio » Wed Feb 07, 2007 5:48 pm

I was going to brew this Kolsch-type beer today but my outside pipes & hose were frozen up :x

It looks a bit boring as it is so I think i'm going to throw some frozen raspberries into the secondary as an experiment. I was thinking about 2 - 2.5 kilos, does that sound about right? Where's the cheapest place to buy frozen raspberries, any ideas :?:

It's a golden / amber ale brewed in Cologne using lager ingredients temperature stepped mash but top fermented. Bloody lovely it is too :D

I put 5 bags of frozen raspberries (350 grams each) into a wheat beer. Left them in the secondary for about 2 weeks. Came out with a nice red colour and sharp taste. Got mine from Sainsburys. Can't remember how much they were, but don't think the price varies much.
Only brewed it cos the Missus said she liked fruit beer. Still got 1/2 a keg sitting in the fridge.

I'm brewing the Kolsch at the moment. I still don't know whether i'll bother with the raspberries, we'll see!

Like tubby said, it's Cologne's native beer - very nice stuff.

I don't think i'll be trying my hand at any more fruit beer. Glad i gave it a go and was fairly pleased with the results. However it's not the sort of beer you drink everyday and takes up valuable corni space.

Dumped in 2 kilos of raspberries last night. We'll see what happens. No real fermentation activity yet.

They do go very mushy after a short time, so hopefully you can stick a hose pipe in the neck and give them a blast. The other slightly annoying thing is that some of them sink to the bottom and some float. Makes syphoning interesting.

I think you've gone a bit fruity.

Hmm, there's no activity in the airlock yet. Time to re-pitch some yeast?

Shiny beast if you don't want to make 5 gallons, why not syphon off 1 gallon into a secondary fermenter and add your fruit then. Then bottle it. Fruit beers do need quite a bit of maturation to get the best out of them, and do seem to taste better when bottled.

Yep, I think I might have shocked the yeast. :(
