CAP problems

Post by maltman14 » Thu Mar 29, 2007 11:26 am

I have a CAP brewed with a czech yeast strain that has been weeks, well 12 weeks brewing outside it tastes very dry but its still plopping away on the airlock it has been taked off the trub.
SG is is not possible at the moment as I've broken my good hydrometers (expensive hobby sometimes).
I think this could be kegged or casked now but its not clear as its still fermenting .
What would you lot do fine it and keg it ,fine it and cask it or leave it another few weeks or fine the fermenters .The weather is getting warmer now.
I've got 45 gallons fermenting and not a drop to drink

Twelve weeks is an awfully long ferment, even for a lager. However if it's still bubbling away, you really must leave it to finish it's job before fining it or you'll end up with a sweet beer. If it has been brewing outside, the fluctuations in temperature may be to blame (lager yeasts tend to slow down to a crawl below 10 C in my experience).

Buy a cheap hydrometer (Or Borrow one, Rhymey not got a spare you can borrow, or Darren?) and check the gravity.

I'd bet on the fact that its finished, and all you've got is excess saturated CO2 coming out of solution, as it warms up.

Not clearing could be due to temperature fluctuations during the ferment. If it was me, I'd make up a sachet of gelatine for each 10 gallons in 1/2 pint of water, mix it wait a little bit of the beer then pour it in and 'GENTLY' stir . . . more like swirl it about a bit Kelvin. That should clear it bright in a matter of days. Then rack to keg.

Yes its a matter of trust with instruments I do have a few old wine hydrometers and they read 1.001 which I don't believe .Just have to grin and bare it and fork out for a good one .Refractometer would be good:)
Its pretty cold now and the CAP is still moving the air lock about every minute its not warming up.The brew never got off two a great start but its been consistant very regular.just for months :o
I have fresh finnings from the brewery plus pvpp if I need it.
Its Easter so I got a cask of lager from the brewery not to do without :=P .Its a lot lighter and not as much body a very nothing experience
Oh well live and learn
