Having a crack at this one today:

and it's not got off to a great start. So far, my thermometer slid inexorably below the surface of the grist in the mash tun and, for the second brew in succession, I've forgotten to fix the hop strainer to the boiler :oops:

However, it looks like I've managed to extract 30 ltrs of wort which is now happily bubbling away with the first batch of Aurora.

Only difference to Vossy's recipe is the yeast - I'm using a Safale SO4 which I had in stock. What will be the impact of this?

Hi BB,

Good luck with the brew, it's definately one of my fav's :wink:

I now use SO4 as opposed to Gervin for this and other pale ales.

It ferments rapidly. My brews have finished fermenting after only 3 days with SO4, though I still leave them for 10.

As DaaB says, you wont notice a huge difference in taste between the 2 yeasts, though there definately is a difference.

The SO4 imparts a slightly peppery taste to the finish, something I really like and something which can be easily tasted in Young's Champion bottle conditioned beer, though I'm not saying Youngs use SO4, but the peppery tasting note is really easy to pick up in the ale, for reference with your own :wink:

I am still to try T58 yeast with this brew, but I'm sure it would be the better yeast for imparting spicy and peppery tastes in this ale.

Thanks guys.

The yeast has now been pitched and, as a starter, it certainly got cracking very quickly.

The wort seemed quite murky but this is the first time I've done a pale ale so maybe it's just less noticeable when other malts are mixed in.

Anyway, I came out with 20 litres at 1050 which seemed pretty good given the earlier snags so now all I've got to do is sit and wait..........and wait........

Never mind, there's still some Adnams clone left in bottle so, after a long day, I can hear it calling. :D
