Brewdog Libertine Ale recipe attempt?
Hi!
I had this week a Brewdog Liberting Ale... whhhhoooowwww what a beer!
I'm searching to clone it. I've see on Brewdog website that it's:
ABV:7.2%
OG:1069
IBU's:65
Malts:Maris Otter, Caramalt, Munich Malt, Dark Crystal Malt, Carafa
Hops:Simcoe
Twist:A single hop black ale; loaded with Simcoe.
Anyone had a clone version (AG or extract). Which yeast?
Thx a lot for your feedbacks.
Hoppy regards!
Dom

Re: Brewdog Libertine Ale recipe attempt?
Right, I think they use a british ale yeast for all their beers. I haven't tried it so I can't comment other than that. Be interested to know how you get on!
Re: Brewdog Libertine Ale recipe attempt?
That's about 80% apparent attenuation so we can safely rule out windsor

Re: Brewdog Libertine Ale recipe attempt?
you want a clean yeast so 001 is a winner and this ties in within the IPA book with the recipe for hardcore IPA

Re: Brewdog Libertine Ale recipe attempt?
thx.
I was thinking what could be the malt bill. It's some kind of porter profile with the fresh tast of hop.
First idea was to clone the Punk IPA, keep the hop schedule, exchange all hops with the single simcoe and dry hop as well with simcoe. Then I've to find a porter which can fit this profile.
Any idea of a porter which let the freshness of the hops going through?
Thx for all your input.

Re: Brewdog Libertine Ale recipe attempt?
Not sure about a porter i would go more like an IPA with 5 or 6% special Cafra III in it to give the black colour, from when i last had it i would describe it as a black IPA more than a porter.

Re: Brewdog Libertine Ale recipe attempt?
A Porter would normally contain brown malt and it would get its colour from the dark crystal malts, but this beer is a lot cleaner and there is not the body you expect from a porter, its a lot thinner.
My guess for the grain bill would be something like
Maris Otter 72%
Caramalt 7%
Carafa III special 6%
Munich 12%
Dark Crystal 3%
Its a black IPA with a small hint of dark crystal?
Cheers

Re: Brewdog Libertine Ale recipe attempt?
Surely that can't be right! All of their hop-forward beers (Punk, IPA is Dead, Hardcore, Dead Pony Club, Chaos Theory, ...) have basically zero flavour contribution from yeast. Makes much more sense to me to use a west coast ale strain instead (WLP001, 1056, US05).darkonnis wrote:Right, I think they use a british ale yeast for all their beers. Hi Dom
I agree, Brewdog's Libertine is a very good beer.
In a previous post, Jimp2003 details how he made his black IPA based on an American IPA. See the thread below for details.

Not tried it myself but it looks like a great recipe.

Re: Brewdog Libertine Ale recipe attempt?
Its a Black IPA. The crystal malts are there in quite small amounts to give it some backbone, like a lot of American IPAs. The Carafa is what gives it all the colour. By far the most important factor in this beer is an absolute shitload of Simcoe, both kettle and dry.
Use a clean yeast, it has no presence in this beer.

Re: Brewdog Libertine Ale recipe attempt?
Thx for the feedback.
I've try to compile all the infos around and here is my first attempt to Libertine Ale:
@Befuddler: could you name a clean yeast strain? I've thinking to the S-05 or it is too fresh for this one or better to go with a S-04 which will finish more dry maybe?
I've taken the same schedule as the Hardcore IPA from the IPA book (Mitch Steele) + add some Simcoe in the mash to lead to more hop profile.
Thx in advance for your inputs and feedback.
Sounds very yummmy... and cannot be so bad
Hoppy regards,
Dom

I've choose the malts regarding the subtitution table (see notes) as the malt bill are not available under the same name in Switzerland as in UK.Libertine Ale Clone > Draft

Re: Brewdog Libertine Ale recipe attempt?
US05 would be a perfect yeast for this. S04 has a distinctive flavour and wouldnt be appropriate.
You need loads more Simcoe late and dry.. at least 5x that amount IMO.

Hops - 100g at flame out for a 30 min steep then 100g in the dry hop should do it!
